This recipe is for Chicken and Sausage Cajun Creole Jambalaya baked in a pre-heated oven at 350 % using a large metal pot with a lid. Serves 20 Yankees, 15 Texans or 10 Cajuns.

7 large chicken breasts

1 lb of smoked sausage (sliced 1/2 ")

3 large onions (chopped)

1 large bell pepper (chopped)

3 cups rice

3 large chicken bouillon cubes

3 tsp salt

1/2 tsp red pepper

1/2 tsp garlic powder

7 cups water (boiling)

Brown the chicken breasts and set aside

Sauté onions & bell pepper

Add rice, garlic, salt & pepper and cook / brown 3 - 5 minutes - stirring

Add meat, chicken bouillon cubes, boiling water

Bring to a boil stirring very well

Cover pot and bake in preheated oven at 350 % for 15 minutes

Remove from oven and stir well mixing the seasoning

Cover pot and bake for 20 more minutes in oven at 350 %

Stir well and serve with hot buttered rolls and green salad
